About the artisans:

If you want to know what a responsible, traceable, and local business looks like, take a peek at Clac! (Acronym for "Conserverie Locale Artisanale & Créative" or simply the delightful sound of a popping lid), a small artisan company, based 10 km away from the birthplace of Michelin (the tires and the guide) in Clermont-Ferrand.

Their focus is vegetables. And fruits. And legumes. Any healthy green that grows in the Auvergne region, and have potential to be a great aperitif snack, a ready-to-eat-dish, a fragrant sauce or an irresistible desert. The Clac! team have mastered the skill of conserving them all along with their nutrients and vitamines.

First thing you’ll notice – these folks give you all the logins and passwords to where their ingredients come from. Seriously. They detail the source of every single ingredient and partner and outline how many kilometers away they are based from Clac!'s headquarters. Their ambition to source as close to the production site as possible ensures their products are THE FRESHESHESHEST they can be. WOW!

Second – this small young team are MAGICIENS (Absolute wizards!) when it comes to turning vegetables into culinary masterpieces. Their products are colourful, just like a vibrant garden, and burst with flavour of the southern harvest.
